I developed these pancakes for health concious individuals. I use oat flour and almond flour instead of all purpose flour in this recipe. Oat and almond flour help sustain energy levels, aid in weight management, and prevent blood sugar spikes. A balanced breakfast of Dad's Protein Pancakes, fresh fruit and yogurt will fill you with the energy you need to tackle any busy day.

  • (4 - 1/4 cup or 10 silver dollar)

    1 cup pancake mix

    2/3 cup water

    • Stir together until just combined (batter will appear lumpy)

    • Rest the batter 3-5 minutes while you prepare griddle/skillet

    • Prepare griddle/skillet with 1 Tbsp vegetable oil and place on low heat

    • Check readiness with a drop of water (griddle/skillet is ready when water sizzles)

    • Pour batter onto hot skillet and wait until air bubbles pop and edge appears cooked

    • Flip each pancake and wait 3-4 minutes to finish cooking
